Sous Vide Calendula

Here is an experiment I tried with my sous vide. This is dried calendula in olive oil that I processed in my sous vide at 100F for 2 days. The resulting oil was very nice. It was a lovely yellow with the light green undertone. I have made it into a balm with Shea butter and it is fantastic. Sous vide processing was very successful but I think that I prefer the 6 week sit method better. It is less energy and labor intensive but if I needed a quick turn around for my oil sous vide would be my choice.
